A few people have asked me what Nom Nom means. I thought it was universal but I guess not. To reference one of my favorite dictionaries, it means to eat with extreme delight, or the noise someone makes when chewing food. I prefer definition numero uno.

Either way, I’m sticking with it…Nom Nom, it is.

First, no, I’m not Italian. I’m Ecuadorian, but if I must say so myself, I make a mean little pasta dish. And I’m happy to say that my husband and son devour this one. I guarantee it will be a huge hit in your home too! It’s colorful and delicious!

It’s actually pretty simple to make and you just need a few ingredients. Sometimes, I do this one on weeknights after work and it takes me about 45 minutes from beginning to end.

 

Here’s what you’ll need:
Premio Sweet Basil Italian Sausage
1 lb of your favorite pasta (I used farfalle, aka, bow tie pasta)
1 red pepper
1 orange pepper
1 yellow pepper
15 oz of diced tomatoes with basil and oregano
2 cups of part skim mozzarella cheese
2 tbsp of olive oil

 

1. Put a pot of water on to boil.
2. In the meantime, chop the red, orange and yellow peppers into long strips and cut each strip in half. Set aside.
3. Add 2 tbsp of olive oil to the bottom of a large skillet.
4. Cut the sausage into small bite size portions and add the pieces into skillet on medium heat.
5. Meanwhile, add the pasta into boiling water.
6. While the pasta is cooking, stir sausage occasionally until they are browned.
7. Once the sausage is browned, add diced peppers into the skillet and cover. Cook for about 5 minutes (my son loves raw peppers so I don’t like to cook them for too long so they stay nice and crunchy).
8. Once pasta is al dente, drain and set aside.
9. Add 15 oz of diced tomatoes with basil and oregano into the skillet and stir. Cook for about 2 minutes uncovered.
10. Add pasta into the skillet and mix together.
11. Right before serving, slowly add 2 cups of part skim mozzarella cheese into the skillet, stirring as you mix all the ingredients together.

 

That’s it. Serve and enjoy!

 

PS – I can’t take the credit for this one. My mom came up with it a few years ago and I’m calling it Ruthie’s Pasta!
